Butter Beans produce yellow, fleshy, oval pods that have a soft, creamy flavour and floury texture when cooked. Full of protein and perfect in soups, stews and summer salads, especially mixed bean salads. It's a high yielding plant with a vigorous growth habit. They make a great vegetarian pâté and work well in rich, wintry stews.
