Eggplant 'Bonica' is a highly productive round to oval large, tasty, purple fruit. It’s a heavy cropper with excellent disease tolerance. It’s a fairly low maintenance plant producing small, pink flowers that are followed by early maturing eggplants. The tasty Eggplant Bonica can be fried, baked, roasted, barbequed, grilled, stewed or used in dips, it’s most notably used in the popular and delicious Baba Ganoush and in Ratatouille.
