Is a strongly flavoured sprawling perennial herb with narrow green-grey leaves that is easy to grow but rarely sets seeds. It has a wonderfully fine texture that prefers a well-drained soil and needs a sunny position that is sheltered from winds and winter frosts. The leaves are best picked when young for the best flavour.
French tarragon with its sweet licorice flavour can be used fresh or dried. It’s used to make the traditional Bearnaise sauce and goes well with fish, pork, beef, poultry, game, potatoes, tomatoes, carrots, and most vegetables. It's also delicious in cream sauces, herbed butters and vinegars, soups, sour creams, and yoghurt.
